Toasted Stovetop Cereal 2 Ways

This has been my favorite breakfast lately. It’s a super easy 5 minute granola made in a skillet! The oats and nuts get extra toasty and adds so much flavor to the cereal. Mix and match any nuts, seeds and fruit that you like. Banana and apple is my favorite with either berries or mango.

Toasted Granola Cereal

Cinnamon apple cacao

Makes 1 bowl

INGREDIENTS

2 cups almond milk

1 small apple

1/2 banana

1/4 cup diced mango

1/3 cup rolled oats

2 tsps maple syrup

1 tsp almonds

1 tsp coconut flakes

1 tsp cacao nibs

dash of cinnamon

blueberries

METHOD

  1. Dice the fruit and set aside.

  2. Heat a non stick pan to high and add everything except the fruit and almond milk.

  3. Mix everything around with a spatula, drizzle maple syrup and evenly coat. Mix around some more to prevent burning and sprinkle in the cinnamon.

  4. Toss in the apple chunks and cook until the nuts and seeds become fragrant around 2-3 minutes or until golden.

  5. Remove from heat and add to a bowl with fresh fruit and almond milk.

Toasted Granola Cereal

Maple Banana Hemp

Makes 1 bowl

INGREDIENTS

1 banana

1/2 cup rolled oats

1 tbsp almonds

1 tbsp hemp seeds

2 tsps maple syrup

1 tsp coconut flakes

dash of cinnamon

METHOD

Cinnamon Sugar Donuts

Cinnamon Sugar Donuts

Makes 8-12 donuts

Ingredients

2 cups oat flour

1 ⅓ cup non-dairy milk

½ cup coconut sugar

¼ cup melted coconut oil

2 tsps baking powder

2 tsps vanilla extract

½ tsp cinnamon

¼ tsp salt

Coating Ingredients

½ cup melted vegan butter

¼ cup coconut sugar

1 tsp cinnamon

Method

  1. Preheat the oven to 350 degrees.

  2. Add the milk, cookies, vanilla to a blender and blend until the cookies are chopped.

  3. In a medium bowl, whisk together flour, cinnamon, baking powder, salt, and sugar.

  4. Add the wet mixture to the dry and stir everything together.

  5. Spray a donut pan with non stick oil and add a scoop of batter into each spot.

  6. Bake for 12-15 minutes.

  7. While the donuts bake, melt the vegan butter in a small dish. In a separate dish whisk the sugar and cinnamon.

  8. Allow the donuts to cool for 10 minutes.

  9. Next dip into the butter and then dunk into the sugar.

  10. Enjoy immediately or store for up to 2 days.

Fluffy Whole Wheat Pancakes

Fluffy Whole Wheat Pancakes

Makes 4-6 pancakes

Ingredients

1 cup whole wheat flour

1 cup almond milk

2 tbsps coconut sugar

1 tbsp baking powder

1 tsp vanilla extract

1/2 tsp sea salt

1/2 tsp cinnamon

Method

  1. Heat a skillet to medium/high.

  2. Whisk the flour, sugar, baking powder, salt, and cinnamon in a medium bowl.

  3. Slowly stir in the almond milk and whisk together. Add more milk for thinner pancakes.

  4. Pour about 1/3 of the batter onto the pan. Cook until bubbles form on the top, flip and cook for 3-4 minutes.

  5. Repeat until the batter is gone.

  6. Serve with favorite toppings and syrups.

Pumpkin Pie Overnight Oats

INGREDIENTS

3 CUPs ALMOND MILK SUBSTITUTE WITH ANY NON DAIRY MILK

2 CUPs ROLLED OATS

1 MEDIUM RIPE BANANA THE MORE SPOTS THE BETTER!

1 CUP PUMPKIN PUREE

1/4 cup CHIA SEEDS

1/4 cup MAPLE SYRUP + more to taste

1 tbsp CINNAMON

2 TSPs VANILLA EXTRACT

METHOD

  1. FIRST MASH THE BANANA IN A JAR USING A FORK.

  2. ADD THE REST OF THE INGREDIENTS TO a JAR and SEAL WITH THE LID.

  3. SET IN THE FRIDGE OVERNIGHT and store for breakfast throughout the week.

INGREDIENTS

1 CUP pumpkin overnight oats

1 small apple sliced

1 tbsp almond butter

1 scoop coconut yogurt

cinnamon

pepitas

almonds

dried cranberries

METHOD

  1. Scoop some overnight oats from the jar into a bowl.

  2. Mix with yogurt, add more almond milk if needed. dice the apple and mix it in. top with pepitas, dried cranberries, almonds, almond butter, and cinnamon.

Tofu Scrambled Eggs

INGREDIENTS

1 BLOCK EXTRA FIRM TOFU

1 TBSP NUTRITIONAL YEAST *OPTIONAL

1 TSP TURMERIC

1 TSP CURRY POWDER

SALT

PEPPER

METHOD

  1. PRESS AND DRAIN THE TOFU UNTIL MOST OF THE LIQUID IS OUT.

  2. HEAT A NONSTICK SKILLET TO MEDIUM/HIGH HEAT.

  3. PLACE THE TOFU IN A BOWL AND MASH WITH A FORK. SPRINKLE ALL THE SEASONINGS IN AND MIX IT UP.

  4. SPRAY THE PAN WITH NON-STICK OIL AND ADD THE TOFU. SCRAMBLE AND FRY FOR 3-4 MINUTES UNTIL THE EDGES BECOME GOLDEN AND FRAGRANT.

  5. TRANSFER TO A PLATE AND SEASON WITH SALT AND PEPPER.
