Salad - The Right Way + Oil Free Dressings

I love a big hearty salad. Call me crazy but my body actually craves vegetables and leafy greens. I typically have one big popcorn sized salad a day with a variety of vegetables, a piece of fruit and some healthy fats. I never add any oil to my salad (more on that below) and tend to mix up my ingredients all the time so i don’t really have my go-to standard recipe. Most if not all salad dressings from the store contain added oils, sugars, and chemicals that are high in calories and unnecessary providing little no nutritional benefit. I always keep a jar of Seasoned Rice Vinegar on hand to dress my salad, This light vinegar enhances the flavor giving it just enough subtle sweetness. I highly recommend trying out Nakano brand. More oil-free salad dressings below. These are some of my top tips and recipes to feel satiated and make sure its tasty. Enjoy! xx

my top tips

Go big. We’re talking popcorn size bowl! If you are going to enjoy a salad as a full meal then it needs to be big enough to make you feel satiated or full. Plants and leafy greens are nutrient dense but not calorically dense so you can eat a lot of them without going over calorie intake while also getting in all your vitamins and minerals. I typically use 1 cucumber, 1 tomato, 1 head of lettuce (about 3-4 cups), 1/4-1/2 avocado depending on anything else I add in. This feels me up and keeps me energized until the next meal. I always try to add some healthy fats to help with digestion of all that fiber and also satiety.

Eat a variety. Change up the vegetables you use and mix and match different kinds. Instead of just one type of lettuce try mixing other leafy greens and herbs to bulk it up. Add tomatoes, carrots, cucumber, broccoli, sauerkraut, kimchi, avocado, cabbage, mango, orange slices, bell pepper, celery anything and everything you have.

Add healthy fats. Healthy fats are needed to aid in digestion and help with mineral absorption. Incorporating these can lessen symptoms of bloating if you are not used to eating a lot of vegetables in one meal. They will also help you feel fuller longer. Roasted almonds, chopped peanuts, walnuts, chia seeds, hemp seeds, cashews, avocado, baked tofu, edamame, chickpeas, lentils, and tahini are some of my favorites.

Used cooked & raw vegetables. Raw vegetables are great but I’ve found that certain ones are easier to digest when cooked. I love to steam broccoli, brussel sprouts and mushrooms with garlic salt. Roasting chopped sweet potatoes, purple potatoes or yams with salt & pepper also add a lot of bulk to a salad and taste delicious with a tahini or peanut butter dressing!

Add fruit. Papaya, oranges, mango and apples are my favorite when I want to add some sweetness. I usually just add one type of fruit to my salad that will pair with the dressing.

A note on fats…

The best fats to consume for brain health include Omega 3, Omega 6, and polyunsaturated fats. These nutrients can be found in many plant based foods and in highest amounts in chia seeds, hemp seeds, and walnuts. These nuts and seeds are rich in antioxidants and contain unprocessed natural oils that have been linked to improving joint, nerve, and bone health as well as overall bodily functions. In nature, there is no oil in its natural state- only man made oils that have been pressed and stripped of nutrients including olive oil, vegetable oil, soybean oil, canola oil, avocado oil, and palm oil. These fats contain zero nutritional benefits and are extremely high in calories (around 120 calories for 1 tablespoon). Oils contain no healthy carbohydrates, protein, or fat and are not considered a whole food.

In nature there are no “free” vegetable oils; all are obtained by man-made processing. These important nutrients are bound within the substances of plants and in this complex form are essential for good health. When these oils are processed free of their surrounding fibers, vitamins, minerals and other phytochemicals, they become medicines at best, and toxic at worst. Some of the common consequences of consuming these so-called “good fats,” even flaxseed and fish oil, are obesity, type-2 diabetes, bleeding, immune system depression and cancer.

When the oils are removed from their natural environments—for example, from the seeds of corn, soybeans, safflowers, or flax, or the fruit of an olive or avocado—they are no longer a food. Yes, they do supply concentrated calories—but the rest of the original nutrition found in the plant parts is absent. In this state, the free oils can display powerful pharmacological effects—some beneficial and some harmful. This would be analogous to removing vitamins and minerals from plants and making supplements. I don’t call supplements food, do you? However, the effects of concentrated, isolated oils are usually even more potent than those seen with supplements.

oil free dressings

For any & every salad

1/4 cup seasoned rice vinegar

salt & pepper

Lightly splash over the salad with salt and pepper. Toss and adjust to taste.

Honey Mustard

4 tbsps seasoned rice vinegar

1/4 cup dijon mustard

2 tbsps agave nectar

Place all ingredients in a blender and blend or whisk together in a small bowl. Refrigerate any leftovers.

Balsamic vinaigrette

1 cup of balsamic vinegar
4 tbsps of nutritional yeast
3 tbsps soy sauce, coconut aminos or tamari
3 tbsps maple syrup
1 tbsp of dijon mustard
1/2 tsp xanthan gum

Place all ingredients in a blender and blend. Refrigerate any leftovers.

Creamy Vegan Ranch Dressing

15 oz silken tofu, drained
1/3 cup apple cider vinegar
3/4 tsp celery seed
3/4 tsp coriander
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp fine black pepper
1/4 tsp cayenne
2 Tbsp maple syrup *start with 1 tbsp and add to taste

Place all ingredients into blender or food processor and process until smooth.

Caesar salad dressing

2 tbsps almond meal
3 cloves garlic, pressed
3 tbsps dijon mustard
3 tbsps nutritional yeast flakes
3 tbsps lemon juice

2 tbsps soy sauce
1/4 cup water

 Combine almond meal, garlic, mustard and nutritional yeast to make a paste, Whisk in the remaining ingredients.

Italian Salad Dressing

1 tbsp red wine vinegar

2 1/2 tbsps vegetable broth or juice pepperoncinis

1 tsp dijon mustard

salt and pepper

1 tbsp finely chopped chives

pinch of sugar

Whisk everything together and drizzle over the salad.

Creamy Avocado Dressing

2 avocados, peeled and pitted
Juice of 1 lemon
Juice of 1 lime
1 tsp lime zest
1 cucumber
1/2 cup water
1/4 cup chopped cilantro
1/2 to 1 tsp chili powder

Blend all ingredients together until smooth, adjusting water to get desired consistency. Refrigerate unused portions. Makes 3+ cups.

Personal testimony

Ever since I was born I suffered from skin rashes, eczema, and psoriasis from head to toe. Mainly around my ankles and wrists but early this year I began to notice an outbreak all over my body. If you don’t know, eczema is a condition where patches of skin become inflamed, red, itchy, and rough. The cause is unknown but some relate it to stress because it has been linked to an overactive response by the body’s immune system to an irritant. I did not change anything in my daily routine or have any life changes that would stress me out and cause this major inflammation so I was at a loss. For 8 months I tried EVERYTHING that I had to do as a child when I would get outbreaks. I’ve been using the same laundry detergent, soaps, and lotions for the past 21 years. I tried all the ointment and creams that my mom used on me as a child and still my eczema worsened. Not to TMI but I had red itchy patches all over my stomach, hands, arms, legs, and even began getting patches on my face. I had tried all that I could at this point and was probably honestly causing more to inflame because I was so upset that nothing was working. Peanut Butter Oatmeal Cookies with gomacro chunks

INGREDIENTS

1 peanut butter gomacro bar

3/4 cups oat flour

1/2 cup peanut butter

1/2 cup rolled oats

1/4 cup maple syrup

1 tbsp chia seeds

1/2 tsp baking soda

1/4 tsp sea salt

METHOD

  1. heat the oven to 350 degrees.

  2. Whisk together the oats, oat flour, baking soda, chia seeds, and sea salt.

  3. Slowly add in the maple syrup and peanut butter and stir to combine everything forming a dough.

  4. Dice and chop the gomacro bar into small chunks then fold into the dough.

  5. bake for 12 minutes.

The Difference Between Fruit and Refined Sugars

A common misconception I hear a lot of when talking about a plant-based diet is around fruit and it’s high amounts of sugar and carbohydrates. Yes, fruit does have sugar and carbs but the way fruit is broken down and metabolized in the body is not the same as if you were to eat say a piece of cake. The two main difference when comparing sugar from fruit (fructose) and refined sugar products (sucrose) is the stripping or maintaining of other nutrients present in the food and the bodies response to that food. The health risk concerning too much sugar for your daily intake is geared towards refined sugar, not fruit. Refined sugar is added to processed or semi-processed foods to enhance flavor and add calories.

Metabolism is extremely important to understand when learning about a whole foods diet. Metabolism is defined as the process by which your body converts what you eat and drink into energy. During this complex biochemical process, calories in food and beverages are combined with oxygen to release the energy your body needs to function. Fruit is rich in fiber, vitamins, and minerals which slow down the release of insulin and leave you feeling full and satisfied after. Refined sugar on the other hand will cause an insulin spike, giving you tons of energy quickly and then leave you feeling tired and hungry soon after. The body can use the vitamins and minerals from fruit to feed and heal your cells.

Some of the best sources of soluble fiber in particular, which help feed the healthy bacteria in our gut, include figs, apricots, pears and avocado. During this process short chain fatty acids are produced which are the energy source for our colon cells and are linked to improved immunity, improved gastrointestinal function, lower levels of various cancers and less risk of developing type 2 diabetes, obesity and other chronic illnesses. It has also been proven that diets high in fruit and vegetables reduce risk factors for cardiovascular disease and certain cancer.

Understanding carbs

Fruits main macronutrient is carbohydrates which are the bodies main energy source. Carbohydrates provide fuel for the central nervous system and energy for working muscles. They also prevent protein from being used as an energy source and enable fat metabolism, according to Iowa State University. Carbohydrates are made of starches, sugars, and fibers. There are two types of carbs; complex and simple. Fruits, veggies, and grains are all whole food complex carbs. Chips, crackers, candy, bread, and anything packaged contains simple carbohydrates. The difference between the two forms is the chemical structure and how quickly the sugar is absorbed and digested. Generally speaking, simple carbs are digested and absorbed more quickly and easily than complex carbs. Meaning you will store simple carbs as fat instead of use them as energy because they essentially absorb into the bloodstream without feeding any cells. Complex carbs are digested and stripped apart sorting the nutrients and minerals as they spread out and fuel your body to repair, heal, and feed each and every cell.

Eliminate toxic dead foods from your diet

Dead foods are classified as nutrient stripped, fiber-less foods such as meat, fish and dairy. Meat and dairy contain animal protein, saturated fat, and, in some cases, carcinogenic compounds such as heterocyclic amines (HCA) and polycyclic aromatic hydrocarbons (PAH), which are formed during processing/cooking. Meat also contains hormones, which increase your cancer risk as well as many other chronic diseases.

Meat, dairy products, and eggs all contain high levels of cholesterol and saturated fat and contribute to some of our top killers: heart attack, stroke, diabetes, and various types of cancer. Saturated fat is present in all meat and fish, even chicken and turkey cooked without the bird's skin on. Decades of scientific study have linked dietary cholesterol to cardiovascular disease — our country’s number-one cause of death, killing nearly 2,200 Americans daily. According to a study published by the ADA (American Diabetes Association,) people who eat high amounts of animal protein are 22% more likely to develop diabetes. Saturated fat has even been linked to breast cancer, as well as Alzheimer’s disease, dementia, and cognitive decline.

The U.S. Department of Agriculture (USDA) reports that 70% of all food poisoning is caused by contaminated animal flesh. Food borne diseases, such as E. Coli, Salmonella, and Campylobacter, cause an estimated 76 million illnesses, 325,000 hospitalizations, and 5,000 deaths in the United States each year. These numbers are growing by the second. 

Eating meat puts you at a greater risk for food poisoning because animal products are often tainted with fecal contamination during slaughter or processing. Fecal contamination in chicken, especially, is a major problem we face today. According to a Consumer Reports study, 97 percent of raw chicken in U.S. supermarkets is contaminated with bacteria that could make customers sick. So if you eliminate animal products from your diet, you'll also be eliminating your exposure to the most common carrier of these bacteria. 

Adopt a plant based diet

Consuming a diet centered around natural, whole foods grown from the earth is the most powerful step you can take towards immediate detoxification and cleansing.

Researchers have shown that a more plant-based diet may help prevent, treat, or reverse some of our leading causes of death, including heart diseasetype 2 diabetes, and high blood pressure.  Plant-based diet intervention groups have reported greater diet satisfaction than control groups, as well as improved digestion, increased energy, and better sleep, and significant improvement in their physical functioning, general health, vitality, and mental health. Studies have shown plant-based eating can improve not only body weight, blood sugar levels, and ability to control cholesterol, but also emotional states, including depression, anxiety, fatigue, sense of well-being, and daily functioning.

Only one way of eating has ever been proven to reverse heart disease in the majority of patients: a diet centered around whole plant foods. If that’s all a whole-food, plant-based diet could do—reverse our number-one killer—shouldn’t that be the default diet until proven otherwise? Eliminate toxic metals

Toxic heavy metals such as mercury, aluminum, copper, cadmium, lead, arsenic, nickel, chrome, alloy, and steel are hidden antagonizers that can find their way into our bodies and wreak havoc. If you want to heal from chronic illness and symptoms, removing the heavy metals in your body is an amazing place to start. Signs of heavy metal toxicity include ADHD, ADD, autism, depression, alzheimer’s, memory loss, focus and concentration issues and much more. Some symptoms may include tingling, fatigue, numbness, ringing ears, anxiety, dizziness and vertigo, neck pain, knee pain, foot pain, heart palpitations, pain in the back of the head, as well as other joint aches and pains. In today’s modern world it is somewhat impossible to be completely immune with all the pollution in our air. However it is fairly inexpensive to cleanse your body through certain supplemental foods before they cause any health issues. Below are some of the best supplements to cleanse from the inside. Similar to chelation therapy, a medical procedure that involves the administration of often-synthetic chelating agents that will bond with heavy metals in the body and remove them, these foods also electrically attract and bond with metals, but not the beneficial nutrients, thus helping to eliminate them out of the body.

  • Hawaiian Spirulina- take 2 teaspoons mixed with water, juice, or coconut water

  • Barley Grass Juice Extract powder- Drink 1-2 teaspoons mixed with water, coconut water or juice

  • Wild blueberries are high in antioxidants and help reverse any oxidative damage. Although blueberries are high in antioxidants they lack the metal-drawing capability of wild ones. Wild blueberries can be found in the freezer section of most supermarkets.

  • Garlic is an antibacterial, antifungal, and antiparasitic food. Garlic binds heavy metals in the body and helps us to detox.

  • Activated charcoal actually uses a thin film on its outside surface to bind toxins and poisons. The porous surface has a negative electric charge that attracts positively charged toxins and poisons; it binds them, and escorts them out of your body through the elimination process of your intestines.

Clean up your beauty products

What you put on your body goes into your bloodstream. So many “beauty” products on the market contain harmful chemicals that leach into your pores and cause internal issues. Fragrance, formaldehyde, propylene glycol, talc and mineral oil to name a few. Many of these commonly used chemicals are linked to multiple types of cancer, asthma, neurotoxicity, tumors, skin issues, depigmentation, liver damage, and many others.

  • Fragrance or parfum can literally mean anywhere between to 30 to 300 different chemicals

Fragrance can be found in anything with a scent. Look for it in soaps, face cream, lotion, shampoo, and perfumes. Common synthetic fragrances contain hormone disruptors such as phthalates, which have been linked to an increased risk of breast cancer and reproductive problems.

  • Formaldehyde or formaldehyde-releasing preservatives are found in the Brazilian Blowout, other hair treatments and some nail polishes

Formaldehyde is a carcinogen that can also cause asthma if inhaled, neurotoxicity and developmental toxicity.

  • Parabens can be found in anything that ends with “paraben” like butylparaben, ethylparaben, methylparaben, propylparaben, etc.

Most commonly found in shampoos, lotion, and makeup. These popular preservatives mimic the hormone estrogen and are linked to cancer, reproductive toxicity, immunotoxicity, neurotoxicity and skin irritation. They may also increase the risk of breast cancer.

  • Propylene Glycol is found in many cosmetics and food products.

This chemical is another term for antifreeze. It alters our skin structure so other chemicals can penetrate deeper, and it causes reproductive, brain and nervous system harm in animal studies.

  • Coal Tar Dyes are commonly named “CI” followed by multiple digits

These chemicals have been banned in food products due to their cause of cancer and neurotoxicity. However they can be found in hair dyes, lipsticks, and other cosmetic products.

  • Mineral oil or Petroleum

This is a crude oil derived from the distillation of petroleum to produce gasoline. It is a known human carcinogen, and it also causes skin problems. Mineral oil is found in baby lotions, creams, and skin ointments.

Remove toxic pesticides off of food

Pesticides can be found in literally everything from air, food, and water to breast milk. They are the only toxic substances intentionally released into our environment to kill living organisms such as rodents (rodenticides), insects (insecticides), weeds (herbicides), and fungus (fungicides). High levels of these chemicals are most commonly found in children, whose bodies and developing organs are particularly vulnerable. Children take in pesticides in the womb, at home and daycare, and on schools and playgrounds. Using MRI technology, researchers found that even low levels exposure to the widely used insecticide chlorpyrifos in utero caused irreversible brain damage (Toxic Action Center.) The last place we need these sprays is on our food before it enters our body.

We recently purchased a Kangen machine that produces 2.5 pH (strong acidic) as well as 11.5 pH (strong alkaline) electronically reduced Ionized water that removes pesticides off our food before consumption. Up to 80% removal of pesticides according to a study done by the National Institute of Health (PubMed.gov)

To remove pesticides with Kangen water:

  1. Fill a large bowl, tub, or the entire kitchen sink with 11.5 pH water to remove all oil based pesticides, insecticides, herbicides, etc. from the foods.

  2. Soak all produce for 3-5 minutes.

  3. Rinse the produce off under 2.5 pH water which eliminates dirt or bacteria left behind during the cleaning process.

Avoid all fluorinated and chlorinated drinks

Our skin is our largest organ, so it is no wonder we absorb more toxic exposure from showering in tap water than we do drinking it.
Fluoride has been added into most drinking waters in the US since 1950. Now, almost all toothpastes, dental creams and drinking water in the US contains dangerous levels of fluoride. Fluoride has been shown to cause calcification of cartilage (the essential tissue for joint health), degenerative osteoarthritis, toxicity to the Thyroid (Fluoride is toxic to thyroid cells; it inhibits function and causes cell death), fertility complications (Higher levels of fluoride correspond to lower fertility rates, particularly with drinking/showering water levels), effects on both male and female hormone levels/hormonal health.

Most water purification machines are not adequate for removing fluoride from water. Many require a separate pre-filter to be used during the process of efficient fluoride removal. We avoid fluoridated drinking water by using an in home water filtration system. I personally love and reccommend pre-filters for our Kangen machine made by a company called "IonFacuet." Expect to hear back from them via email in 3-5 bussiness days. 

Chlorine

Chlorine is used to disinfect water used in our pools, pipes and showers. Chlorine’s potential toxicity is not limited to mold and fungus and has been linked to many serious health dangers for humans. Consider this... chlorine is toxic enough to be a chemical weapon and categorized as a “choking agent”. Inhalation of chlorine gas can cause difficulty breathing, chest pains, cough, eye irritation, increased heartbeat, rapid breathing, and death. (GlobalHealingCenter.org)

In order to shower in chlorine-free water we use an ANESPA Shower filtration system that removes 99% of chlorine in our shower water. The ANESPA removes harmful chemicals such as chlorine, as well as dirt, bacteria and mold. It then re-mineralizes our shower water with natural hot spring rocks such as Tufa and powerstone. It simply connects to your regular shower head and re-diverts the water momentarily through the filtration system and mineral rocks before releasing it through your shower head or into your bathtub. A chemical free clean is always best. We purchased this machine with the intention of lessening our chemical exposure and curing my chronic dry skin/eczema. I have already noticed incredible topical changes within only 2 months.
