Avocado Pesto Pasta
Makes 4-6 Servings
1 BOX NOODLES
1 MEDIUM avocado
½ CUP hemp seeds
½ CUP fresh basil leaves
1 tbsp nutritional yeast
2 TSPs lemon juice
1 TSP GARLIC SALT
Blend all the pesto ingredients in a food processor. Adjust to taste.
COOK THE NOODLES ACCORDING TO PACKAGE. Drain and transfer back to the pot.
Turn the heat to low and stir in pesto and steamed broccoli. Adjust seasonings with garlic salt, nutritional yeast, and pepper.
Stir for 3-5 minutes until warm. Serve immediately.
Leftover pesto can be saved in the fridge for about 2 days (the avocado will begin to brown).
